American Diner Style Sausage
This was inspired by "Diners, Drive-Ins and Dives" on Sky's Food Network channel. It is a heavily modified version of an Italian Jumbot recipe. It could be called a sort of Sausage Eggs and Chips as you've never seen it before. A very tasty meal.

1 portion oven chips |
3 tbspn chopped tomatoes |
1 tbspn oil |
200 ml c41 Sauce No 1 |
70 gm onion (prepared weight) |
¼ tspn salt |
50 gm green peppers (prepared weight) |
½ tspn smoked paprika |
2 green chillies |
50 gm mature cheddar cheese |
3 sausages |
1 egg |
Preparation
- Chop the sausages into about 1 inch pieces and grill until nicely browned on all sides, then drain on kitchen paper and set aside.
- Precook a portion of oven chips as stated on the packet, timing their completion to coincide with the final cooking stage of the following recipe.
- Dilute the 200 ml of c41 sauce No 1 with 150 ml of water to make 350 ml of sauce.
- Chop the onion.
- Roughly chop the green pepper.
- Roughly chop the green chillies.
- Grate the cheese.
- Beat the egg.
Cooking
- Heat the oil in a frying pan over a medium heat and fry the onion, peppers and chillies, stirring regularly, for 5 min.
- Turn the heat to full and add the sausages, chopped tomatoes, c41 sauce No 1, salt and smoked paprika and cook, stirring regularly, for 10 min, adding a little water if needed to maintain a thick sauce.
- Reduce the heat to low and stir in the cheese.
- Stir in the egg and cook, stirring, until the egg is cooked, about 2 min.
Serving
- Serve over the chips and top with a little grated cheese.
