C41 American Diner Styled Pasta
This was inspired by "Diners, Drive-Ins and Dives" on Sky's Food Network channel.
It does not follow any specific recipe, but follows the same principles and is unusual but delicious.
Ingredients

1 tbspn oil |
½ tspn chilli powder or cayenne pepper |
80 gm onion (prepared weight) |
100 ml passata |
¼ tspn salt (see note 1) |
200 ml C41 sauce one |
50 gm meat free mince |
100 gm pasta (see note 2) |
Preparation
Cooking
- Heat the oil in a flameproof casserole, add the onion and salt and fry for 10 - 15 min over a low heat, stirring regularly.
- Add the meat free mince and chilli powder and cook, stirring constantly, for 1 min.
- Add the passata and C41 Sauce No 1, cover, and simmer, stirring regularly, for 20 min. (The lid can be removed after 10 min to allow the sauce to reduce to the desired consistency. A little water can be added if needed.)
- Using a saucepan, after the sauce has cooked for 10 min, add the pasta to salted boiling water and cook for 10 min. (or follow the instructions on the packet.)
- When the pasta has cooked, drain and stir into the sauce.
Serving
- This can optionally be topped with a little grated cheese of choice.
Notes
(1) If using a stock cube such as OXO in the C41 Sauce No 1 or if the stock is already salty, do not add the salt.
(2) The pasta should be spiral shaped (Fusilli), shell shaped (Conchiglie) or any other shape that will allow the sauce to 'get into it' it rather that just coat it.
