Chicken Dopiaza

2 tbspn oil
1 portion
pre-cooked chicken
½ onion (150 gm prepared weight)
½ tspn garam masala
100 ml
Masala Sauce
½ tspn ground cumin
¼ tspn salt
½ tspn coriander seeds
½ tspn hot chilli powder
¼ tspn fenugreek powder
Preparation
Mix 100 ml of masala sauce with 100 ml of water.
Grind the coriander seeds to a powder in a pestle and mortar.
Slice the onion into rings.
Cooking
Heat the oil in a wok.
Add the sliced onion and fry for 2 min or until translucent.
Add the diluted masala sauce, mix well and bring to a simmer.
Stir in the salt, chilli powder and the pre-cooked chicken.
Continue to cook on a medium heat for 10 min, stirring regularly.
(The idea is to produce a fairly thick sauce, so keep adding a little water to prevent it becoming too dry).
Stir in the garam masala, cumin, ground coriander and fenugreek.
Continue to simmer for 3 min.
Serving
Serve with rice and optionally some chopped coriander.
