Savoury Meat-Free Mince

1 tbspn oil |
1 tspn dried fenugreek leaves (methi) (optional) |
50 gm meat free mince |

60 gm celery (prepared weight) |
1 stock cube |
60 gm onions (prepared weight) |
100 ml water |
1 clove garlic |
1 tspn mixed herbs |
1 tbspn tomato puree |
100 gm peas |
3 tbspn chopped tomatoes |

4 button mushrooms |

Preparation
- Thinly slice the onions.
- Finely chop the celery.
- Finely chop the garlic.
- Chop the mushrooms.
Cooking
- Heat the oil in a pan and fry the onion over a low heat until dark golden colour.
- Add the celery and fry over a low to medium heat for 10 min.
- Add the garlic and tomato purée and stir fry for 2 min.
- Add the chopped tomatoes, mushrooms, methi (if using), mixed herbs and mince and stir well, cooking for 2 min.
- Add the stock cube, 100ml of water and simmer for 10 min.
- Stir in the peas and continue to simmer for 5 min, adding water if the mixture becomes too dry.
Serving
- Serve with rice.
Notes
The savoury flavour is enhanced by the caramalised onions and this can take up to 1 hour if the heat is very low.
Methi is dried fenugreek leaves and can be purchased from Indian supermarkets.
