Baked Potatoes with Tomatoes

As required olive oil |
50 gm cheese |
½ large onion |
salt and freshly ground black pepper |
1 large potato |
50 ml water |
3 tomatoes |

Preparation
- Preheat the oven to 180° C.
- Thinly slice the onion.
- Peel and thinly slice the potato.
- Thinly slice the tomatoes.
- Grate the cheese.
- Grease an oven dish.
- (it is difficult to give precise quantities as it will depend on the size of the oven dish, just use whatever is needed to make the layers).
- Arrange a layer of onions in the oven dish.
- Add a layer of potatoes.
- Add a layer of tomatoes.
- Drizzle some olive oil over the tomatoes and sprinkle with ½ of the cheese, then add seasoning.
- Add another layer of onions.
- Add a top layer of overlapping potatoes and tomatoes.
- Sprinkle the top with the remaining cheese and drizzle with olive oil.
- Finally add the water and add seasoning to the top.
Cooking
- Bake in the oven for 1 hour.
- (if the potatoes begin to brown too much cover with some foil).
Serving
- Optionally garnish with chopped basil.
