Tiramisu

This is made a little different from normal because it doesn't use raw egg yolks but it works well for a single portion not needing to be refrigerated. It is just a good as what you might find at a restaurant. Tiramisu apparently means 'pick-me-up' in Italian and is presumably a reference to the caffeine in the coffee.

Ingredients

For 1 large or 2 small Continued...
1 mug of strong coffee 1 tspn vanilla extract
120 ml double cream 1 tbspn spirit (optional - see note 1)
80 gm mascarpone 5 or 6 sponge fingers / lady fingers
2 tspn caster sugar as required cocoa powder

Preparation - about 5 min

Notes

(1) Rum (Captain Morgan's) is a good addition but it's your preference.
