Tiramisu
This is made a little different from normal because it doesn't use raw egg yolks but it works well
for a single portion not needing to be refrigerated.
It is just a good as what you might find at a restaurant.
Tiramisu apparently means 'pick-me-up' in Italian and is presumably a reference to
the caffeine in the coffee.
Ingredients
For 1 large or 2 small |

1 mug of strong coffee |
1 tspn vanilla extract |
120 ml double cream |
1 tbspn spirit (optional - see note 1) |
80 gm mascarpone |
5 or 6 sponge fingers / lady fingers |
2 tspn caster sugar |
as required cocoa powder |
Preparation - about 5 min
- Make a mug of black coffee using 4 heaped tspn of coffee powder/granules and allow to cool.
- Mix the cream. mascarpone, sugar, vanilla and optionally the spirit.
- Soak sponge fingers, one at a time, in the coffee and place in the bottom of your desired serving glass/bowl (you may need to break them to fit) and continue until the bottom of the serving glass/bowl is covered, then drizzle a little more coffee over the sponge fingers.
- Spread half of the cream mixture over the sponge layer.
- Repeat the process with another layer of sponge fingers followed by cream.
- Cover the top with a dusting of cocoa powder (a tea strainer is good for this).
Notes
(1) Rum (Captain Morgan's) is a good addition but it's your preference.
