Tamarind Sausage

2 or 3 sausages of choice |
1 tbspn chopped tomatoes |
125 gm onion (prepared weight) |
1 tspn plain flour |
50 gm carrot (prepared weight) |
1 tspn tamarind |
150 gm potato (prepared weight) |
120 gm of beans of choice |
30 gm celery (prepared weight) |
1 beef stock cube |
1 clove garlic |
Freshly ground black pepper to taste |
½ red or yellow pepper |

Preparation
- Depending on the type of tamarind you use, it may need steeping in boiling water for a couple of hours and then straining to remove the pips.
- Chop the onions.
- Chop the garlic.
- Deseed the red or yellow pepper.
- Dice the potato, carrot, celery and red or yellow pepper into pieces of the same size.
Cooking
- Heat some oil in a pan and fry the sausages and onion until they are browned and then reserve.
- When the sausages have cooled chop them into 3 or 4 pieces.
- Heat some oil in a casserole.
- Add the potato, carrot and celery and fry until softened, stirring to prevent sticking.
- Add the garlic, red or yellow pepper and flour and stir for 2 min.
- Pour in some water to cover.
- Add the crushed stock cube, chopped tomatoes, tamarind, beans and black pepper and bring to a boil.
- Return the onions and sausages and stir well.
- Bring to a boil, cover, and simmer, stirring occasionally to prevent sticking, for 45 min, adjusting the heat, removing the cover or adding water to prevent drying out as necessary.
Serving
- This is a meal in itself and needs no accompaniement.
Notes
This will produce more than enough for one person.
