Ras el Hanout

1 tspn cardamom seeds |
¾ tspn freshly ground black pepper |
1 tspn ground cumin |
½ tspn coriander seeds |
1 tspn ground ginger |
½ tspn cayenne pepper |
1 tspn turmeric |
½ tspn alspice |
1 tspn salt |
½ tspn nutmeg |
¾ tspn ground cinnamon |
¼ tspn cloves |
Preparation
- Deseed sufficient cardamom pods to produce 1 tspn of seeds.
- Grind the cardamom seeds, coriander seeds and cloves to a powder using a pestle and mortar.
- Thouroughly mix all the ingredients together.
- Store in an airtight container and keep in a cool and dark place.
