Huevos Rancheros (Ranch Eggs)
This is apparently eaten for breakfast in Mexico, but why only eat it then?
Ingredients

1 tbspn oil |
¼ - ½ tspn cayenne pepper |
10 gm butter |
1 bay leaf |
100 gm onion (prepared weight) |
100 gm red kidney beans ( ½ small tin) |
1 red chilli |
1 egg |
1 clove garlic |
15 gm cheese |
3 tbspn chopped tomatoes |
1 dried birdseye chilli (or some chilli flakes) optional |
Preparation
- Preheat the oven to 200° C.
- Chop the onion.
- Crush the garlic.
- Deseed (or not to your taste) the chilli and finely chop.
- Drain the beans.
- Grate the cheese.
- Crush the birdseye chilli in a pestle and mortar into flakes. (optional)
Cooking
- Heat the oil and butter in a wok or pan and fry, stirring, the onion, chilli and garlic for 5 min.
- Add the chopped tomatoes, cayenne pepper and bay leaf, season to taste, and simmer, stirring regularly, for 3 min, adding a little water if needed to prevent drying.
- Stir in the beans and warm through.
- Spoon the mixture into an ovenproof dish (see notes) and after making a hollow in the centre, 'break in' an egg.
- Top with the grated cheese and bake in the oven for 12 min.
Serving
- Serve with a couple of tortillas and optionally garnish with the chilli flakes.
Notes
A ramekin that holds about 300 ml (12 cm diameter and 5 cm deep) is ideal. This can be taken straight to the table (carefully as it will be hot).
