Piri-Piri Chicken

This is cooked in a non-traditional way (it's easier) but retains the essential flavours.
Piri-Piri can also be spelled Peri-Peri and is said to have Portuguese and African origins. There are many variations on the ingredients but it is based on cayenne pepper and salt with all sorts of personal additions.

Ingredients

For 1 Continued...
1 chicken breast 1 tbspn oil (2)
2 tspn piri-piri spice mix (1) 1 tbspn piri-piri spice mix (2)
1 tbspn oil (1) 50 gm onion (prepared weight)
1 tbspn wine vinegar 2 tspn tomato purée
  1 tspn lemon juice

Preparation

Cooking

  1. Heat the oil (2) in a wok or heavy pan and cook the piri-piri spice mix (2), stirring, for 30 seconds.
  2. Add the tomato purée and cook, stirring for about 15 seconds.
  3. Add the onion and cook, stirring regularly, for 3 min, adding a little water as needed to prevent burning.
  4. Add the chicken with it's marinade and cook, stirring regularly, for 7 min until the chicken is fully cooked, adding a little water if needed to prevent burning. Check that the chicken is fully cooked by cutting a piece of chicken in half and ensuring it is white throughout.
  5. Reduce the heat and stir in the lemon juice.

Serving

  1. Serve with rice and peas or even your own choice of vegetables. If you are British you might even serve with chips!
