Onion and Green Pepper Pizza
Making a pizza for one person using yeasted dough is probably not worth the time and effort but this no-yeast version is very quick and easy.
I first saw this method on a Jamie Oliver cooking programme and it works very well.

Pizza Dough |
Tomato Sauce (see note 1) |
80 gm self raising flour (see note 1) |
75 ml passata |
2 tspn olive oil |
1 tbspn tomato purée |
¼ tspn salt |
¼ tspn salt |
100 ml water (not all will be used) |
½ tspn dried basil |
|
½ tspn dried oregano |
|
½ tspn garlic powder |
|
Topping |
|
50 gm onion (prepared weight) |
|
50 gm green pepper |
|
50 gm mozzarella (or to taste) |
|
50 gm extra mature cheddar cheese (or to taste) |
Preparation
- Using a small bowl add the tomato purée, passata, salt, dried basil, dried oregano, garlic powder and mix well.
- Finely chop the onion.
- Chop the green pepper into approx 1 cm squares.
- Grate the cheddar cheese.
- Place a 10½ inch non-stick frying pan over a high flame before continuing with the dough...
- Using a reasonably sized bowl add the flour, olive oil and salt and mix well.
- Gradually add only as much of the water that is needed to bring the dough together - it can be a little sticky, but only a little.
- Flour a surface and a rolling pin and roll out the dough so it is the same size as the base of the frying pan.
- Add a little olive oil to the hot pan.
- Roll the dough onto the rolling pin and add it to the hot pan.
- Pour the tomato sauce onto the pizza base and using the back of a spoon, cover the dough, avoiding the outer rim.
- Sprinkle on the chopped onion.
- Sprinkle on the green pepper.
- Tear the mozzarella into smallish pieces and place, evenly spaced, on top.
- Scatter the extra mature cheddar cheese on top to taste.
Cooking
- Check that the pizza base is toasted and crispy and then place under a hot grill for about 4 min by which time the top should be bubbling.
Serving
- Cut the pizza into pieces using a pizza cutting wheel.
Notes
(1) 80 ml of flour will make a thin pizza base and therefore crispy - you can use more flour if you like your base thicker with a softer centre.
