Niter Kibbeh

Ingredients

1 portion (approx 50 ml) Continued...
100 ml oil 4 cardamom pods
20 gm onion (prepared weight) 1 inch cinnamon stick
½ tspn garlic 2 cloves
½ tspn ginger ½ tspn fenugreek seeds
  ½ tspn turmeric

Preparation

Cooking

  1. Heat the oil in a pan and add all the ingredients.
  2. Bring to a simmer and cook over a very low heat for about 1 hour, stirring occasionally.
  3. Allow to cool, strain and discard the solids.
  4. Use immediately or store the oil in a small jar and keep in a fridge for a few days until needed.
