Niter Kibbeh
Ingredients
1 portion (approx 50 ml) |

100 ml oil |
4 cardamom pods |
20 gm onion (prepared weight) |
1 inch cinnamon stick |
½ tspn garlic |
2 cloves |
½ tspn ginger |
½ tspn fenugreek seeds |

½ tspn turmeric |
Preparation
- Chop the onion.
- Crush the garlic.
- Chop the ginger.
- Crush the cardamom pods.
- Break the cinnamon stick into pieces.
Cooking
- Heat the oil in a pan and add all the ingredients.
- Bring to a simmer and cook over a very low heat for about 1 hour, stirring occasionally.
- Allow to cool, strain and discard the solids.
- Use immediately or store the oil in a small jar and keep in a fridge for a few days until needed.
