Harissa Spice Mix

1 tbspn paprika (see notes) |
¾ tspn caraway seeds |
¾ tspn cayenne pepper |
¾ tspn ground coriander |
¾ tspn ground cumin |
¼ tspn salt |
Preparation
- In a dry pan, toast the caraway seeds over a medium heat for about 1 min until they become aromatic, then grind to a powder in a pestle and mortar.
- Thoroughly mix together all the ingredients.
- Store in a small jar and keep in a cool and dark place.
Notes
To add a light smoky flavour replace ½ tspn of the paprika with ½ tspn of smoked paprika.
