Greek Gigantes Plaki
This was inspired by Greek Gigantes Plaki but adjusted to simplify the cooking for a single portion.
The Gigantes Beans are replaced by the easily obtainable broad beans.
Plaki apparently refers to the style of cooking with olive oil, garlic, onions, tomatoes and parsley.
I have used oregano (commonly used in Greek cuisine) instead of parsley because I like it.
Ingredients

2 - 3 tbspn oil |
½ tspn black pepper |
60 gm onion (prepared weight) |
1 x 220 gm tin butter beans |
2 garlic cloves (10 gm) |
2 - 3 tspn dried oregano to taste |
1 tspn paprika |
1 veg stock cube |
1 x 230 gm tin chopped tomato |
water as required |
1 tspn tomato purée |

Preparation
- Chop the onion.
- Chop the garlic.
- Drain and wash the butter beans.
Cooking - about 30 min
- Heat the oil in a suitable saucepan over a low heat, add the onion and garlic and fry, stirring regularly, for 5 min.
- Stir in the paprika.
- Add the chopped tomato, tomato purée, black pepper, butter beans, oregano and crush in the stock cube.
- Stir well and add a little water as required.
- Cook covered, stirring regularly, for 20 - 25 min, adding a little water as required to prevent drying.
Serving
- Serve with a bread roll, flavoured flatbread or other bread of choice.
