Chipotle Chicken
Chipotles are smoked Jalapeno peppers and this recipe originates from the Central American area,
typically Mexico.
There are numerous recipes for this to be found on the internet but some of the ingredients can be
difficult to source in UK supermarkets.
Consequently, this recipe uses a pre-made sauce by "Old El Paso" and produces a very pleasant
smoky flavoured dish (see note 1).

2 - 3 tbspn oil |
5 gm garlic |
1 chicken breast |
1 portion chipotle sauce (see note 1) |
salt as required |
1 chicken stock cube (low salt is ok) |
black pepper as required |
1 tbspn creamed cheese (see note 2) |
50 gm onion (prepared weight) |
1 tbspn greek yogurt (see note 3) |
Preparation
- Chop the onions.
- Finely chop the garlic.
- Season the upper side of the chicken breast with salt and pepper.
Cooking - approx 22 min
- Heat the oil in a non-stick frying pan (or flame resistant casserole), over a low/medium heat, and fry the chicken breast seasoned-side-down for about 4 min until browned,
- Season the upper side of the chicken as before, flip over and continue to fry for another 4 min, then remove from the pan and set aside.
- Add a little more oil as needed and fry the onion, stirring regularly, for 4 min.
- Add the garlic and chipotle sauce and cook, stirring for 30 seconds.
- Add a little hot water, crush in the chicken stock cube and stir in the creamed cheese until it melts.
- Return the chicken to the pan and add a little more hot water and cook, covered, stirring regularly, for 10 min, until the chicken is thoroughly cooked, adding hot water as required to maintain the desired sauce consistency and to prevent drying and burning.
- Remove from the heat, stir in the yogurt, and season to taste.
Serving
- Serve with a portion of boiled rice.
Notes
(1) The chipotle sauce I use is from "Old El Paso" (Fajita - Intense Cooking Sauce - Smoky Chipotle - Mild).
The packet serves 4 persons but I suggest splitting the pack into 3 equal parts (approx 50 ml each),
using one portion here and freezing the two remaining portions in small jars for future use.
A little smoked paprika can be added if desired.
25 gm of "Chipotle Paste" (100 gm jar - 4 servings) from ASDA can be used instead.
This produces a hotter result but with a slightly reduced smoky flavour.
The 3 remaining portions can also be frozen for future use.
(2) The creamed cheese can be low fat and supermarkets own brand.
(3) The yogurt can be fat free.
