Creamy Chicken with Spiced Ham and Sausage

25 gm butter (1) |
50 ml dry sherry |
¼ onion (75 gm prepared weight) |
½ chicken stock cube |
2 button mushrooms |
3 tbspn double cream |
1 clove garlic |
2 tspn parsley |
40 gm prosciutto (spiced ham) |
1 tbspn passata |
40 gm salami (cured sausage) |
2 tbspn chopped tomatoes |
1 chicken breast |
½ tspn basil |
25 gm plain flour |
¼ tspn oregano |
Freshly ground black pepper |
10 gm butter (2) |
Preparation
- Chop the onion.
- Thinly slice the mushrooms.
- Chop the garlic.
- Thinly slice the prosciutto and cut into strips.
- Thinly slice salami and cut into strips.
- Butterfly the chicken breast.
- Dredge the chicken in flour.
Cooking
- Melt butter (1) in saucepan over a medium heat.
- Add the onion and fry for 3 min.
- Stir in mushrooms, garlic, prosciutto and salami.
- Add the chicken, season with pepper, and cook on each side for 5 min.
- Add the sherry and cook for 2 min.
- Stir in the chicken stock, cream, passata, chopped tomatoes, parsley, basil and oregano.
- Simmer until the sauce is reduced to preferred constituency.
- Stir in butter.
Serving
- Serve with pasta.
