Creamy Chicken with Spiced Ham and Sausage


For 1 Continued...
25 gm butter (1) 50 ml dry sherry
¼ onion (75 gm prepared weight) ½ chicken stock cube
2 button mushrooms 3 tbspn double cream
1 clove garlic 2 tspn parsley
40 gm prosciutto (spiced ham) 1 tbspn passata
40 gm salami (cured sausage) 2 tbspn chopped tomatoes
1 chicken breast ½ tspn basil
25 gm plain flour ¼ tspn oregano
Freshly ground black pepper 10 gm butter (2)



  1. Melt butter (1) in saucepan over a medium heat.
  2. Add the onion and fry for 3 min.
  3. Stir in mushrooms, garlic, prosciutto and salami.
  4. Add the chicken, season with pepper, and cook on each side for 5 min.
  5. Add the sherry and cook for 2 min.
  6. Stir in the chicken stock, cream, passata, chopped tomatoes, parsley, basil and oregano.
  7. Simmer until the sauce is reduced to preferred constituency.
  8. Stir in butter.


  1. Serve with pasta.
