Chicken Crema
There are a variety of recipes for this dish on-line which can also be found on some
Italian restaurant menus.
This version is home style rather than restaurant style.
A local restaurant also includes some brandy and if this takes your fancy you can
add some along with the cream and basil.
Very tasty it is too!
Ingredients

2 - 3 tbspn olive oil |
to taste salt (see note 1) |
50 gm onion (prepared weight) |
to taste black pepper |
10 gm garlic |
2 tbspn white wine |
1 chicken breast |
4 tbspn single cream |
100 ml chicken stock (see note 1) |
10 gm fresh basil |
70 gm mushrooms |
2 tspn brandy (optional) |
Preparation
- Finely chop the onion.
- Chop the garlic.
- Cube the chicken breast into bite sized pieces.
- Slice the mushrooms.
- Chop the fresh basil (reserve a little for garnish).
Cooking - about 30 mins
- Over a low flame, heat the oil and fry the onion, stirring regularly for 5 min.
- Increase the heat to medium and add the garlic, chicken and stock and cook, covered, stirring regularly, for 10 min.
- Add the mushrooms, salt, pepper and wine and simmer, covered, stirring regularly, for 5 min.
- Reduce the heat and stir in the cream, basil and optionally the brandy and cook, uncovered, stirring regularly, for 2 min.
Serving
- Serve with a selection of vegetables.
- Add the reserved basil to garnish.
Notes
(1) Remember the stock can be salty when/if adding salt to taste.
