Basque Chicken


For 1 Continued...
1 chicken breast 1 tspn tomato purée
10 gm butter 80 ml dry cider
2 rashers of bacon (smoked is ok) 1 chicken stock cube
125 gm onion (prepared weight) 1 clove garlic
½ red pepper 1 tspn dried rosemary
1 tomato Freshly ground black pepper



  1. Melt the butter in a flame proof casserole and cook ½ of the bacon until it begins to crisp.
  2. Add the chicken and onion and cook for 5 min, turning the chicken a few times.
  3. Add the remaining bacon and continue to cook for 4 min.
  4. Add the garlic and tomato purée and cook for 1 min.
  5. Add the cider, red pepper, stock cube, rosemary and season with pepper, bring to a boil and simmer, covered, for 10 min.
  6. (During the cooking add a little water, if needed, to prevent drying out).
  7. Uncover and add the chopped tomato, increase the heat, and cook for 5 min.


  1. Serve with rice and a selection of vegetables.
