Panch Puran
This is an Indian/Asian 5 spice although subtle variations abound as you will see if you "Google" 'panch puran'.

For 1 portion (about 2 ½ tspn) |

½ tspn cumin seeds |
½ tspn fenugreek seeds (see note 1) |
½ tspn coriander seeds |
½ tspn kalonji seeds (see note 2) |
½ tspn fennel seeds |

Preparation
- Heat a frying pan over a high heat for 1 min.
- Add the cumin seeds, coriander seeds, fennel seeds, fenugreek seeds (see note 2) and kalonji seeds and dry roast, regularly shaking the pan, for about 3 min.
- Allow to cool a little and grind to a powder in a pestle and mortar.
Notes
(1) Fenugreek seeds can be difficult to find so you can use ground fenugreek instead, adding it to the dry roasted seeds before grinding.
(2) Kalonji seeds are also known as nigella or black onion seeds.
