Balti Baked Beans

1 tbspn oil |
½ tspn ginger |
125 gm onion (prepared weight) |
½ tspn garlic |
1 tspn green chilli |
½ tspn ground coriander |
1 small tin (220 gm) baked beans |
¼ tspn garam masala |
½ green pepper |
¼ tspn ground cumin |
1 tomato (option) |
¼ tspn salt |
Preparation
- Chop the onion.
- Deseed and finely chop the chilli.
- Finely chop the ginger.
- Finely chop the garlic.
- Deseed and chop the green pepper into approx 1 cm chunks.
Cooking
- Heat the oil in a pan.
- Add the onion and fry on a high heat for 2 min.
- Add the chilli and green pepper and fry on a medium heat, stirring, for 2 min.
- Add the ginger and garlic and fry, stirring, for 1 min.
- Add the garam masala, cumin, coriander and salt and fry for 1 min.
- Add the beans and simmer for 3 min adding water as necessary to prevent drying.
Serving
- Serve with naan, pitta or chapati.
Notes
Optionally, a fresh tomato cut into 8 pieces can be added with the baked beans.
