Spiced Buns (hot-cross without the crosses)

1 tbspn dried yeast |
450 gm plain flour |
75 ml milk |
3 tspn mixed spice |
80 ml boiling water mixed with 40 ml cold |
¼ tspn nutmeg |
1 tspn caster sugar |
200 gm mixed fruit |
Glaze |
75 gm caster sugar |
1 tbspn caster sugar |
50 gm butter |
3 tbspn milk |
1 medium egg |
Preparation
- Preheat the oven to 200° C.
- Blend the yeast with the milk, warm water and 1 tspn caster sugar.
- Set this aside in a warm place for 10-15 min until frothy.
- Meanwhile melt the butter and beat the egg.
- Sift the flour, mixed spice and nutmeg into a large bowl.
- Stir in the yeast mixture, then the mixed fruit, sugar, melted butter and egg to form a dough.
- (it may be necessary to add a very small quantity of milk to bring the mixture together)
- Turn out onto a floured surface and knead until smooth and elastic in texture.
- Return to the bowl, cover with cling film, and leave in a warm place for about 1 hour.
- After about 1 hour, divide the dough into 12 equal parts and knead into round buns.
- Place on a greased baking sheet about 2 cm apart.
- Cover with cling film and leave in a warm place for 45 min.
Cooking
- Bake in the oven for 20 min until golden colour.
- Make the glaze by mixing the milk and sugar.
- When the buns are cooked remove from the oven and brush with the glaze.
Serving
- Allow to cool and enjoy.
