Rock Cakes


Makes 8 Continued...
200 gm self raising flour 100 gm caster sugar
1 pinch salt 100 gm sultanas
75 gm stork margarine 1 medium egg
  2 tbspn milk



  1. Cook in the oven for 20 to 25 minutes until they are firm to the touch and a golden colour.
  2. Remove from the oven and allow to cool on a wire rack before storing in an air tight container..


As an alternative, soft brown caster sugar can be used.
Also 1 tspn mixed spice can be added to the flour if you like this.
