Rock Cakes

200 gm self raising flour |
100 gm caster sugar |
1 pinch salt |
100 gm sultanas |
75 gm stork margarine |
1 medium egg |

2 tbspn milk |
Preparation
- Preheat the oven to 200° C.
- Lightly flour a baking tray.
- Sieve the flour and salt into a large mixing bowl.
- Cut the margarine (striaight from the fridge) into small cubes and add to the flour.
- Rub the margarine into the flour until it resembles fine breadcrumbs.
- Stir in the sugar with a metal spoon.
- Stir in the sultanas.
- In another bowl, mix the egg and the milk.
- Add the egg and milk to the flour and mix together with a fork until the mixture is stiff.
- (It should look rough and lumpy).
- Place 8 tablespoon sized portions of mixture onto the baking tray (leave them rough and lumpy).
Cooking
- Cook in the oven for 20 to 25 minutes until they are firm to the touch and a golden colour.
- Remove from the oven and allow to cool on a wire rack before storing in an air tight container..
Notes
As an alternative, soft brown caster sugar can be used.
Also 1 tspn mixed spice can be added to the flour if you like this.
