Plum Crumble
Recipes for 'crumbles' can be easily found but this has been reduced to suit a single portion, albeit a large portion. Many different types of fruit can be used.

2 plums - depends on size (see note) |
50 gm plain flour |
1 tbspn sugar |
30 gm butter |
1 tbspn water |
50 gm sugar |
Preparation
- Preheat the oven to 180° C.
- Using a sharp knife, carefully remove the stone from the plums and cut the flesh of the fruit into 'bite-sized' pieces.
- Put the fruit pieces into an oven-proof dish and add 1 tbspn of sugar, mixing well.
- Add 1 tbspn of water.
- Cut the butter, straight out of the fridge, into small cubes.
- Add the flour to a decent sized bowl and rub the butter into the flour until it resembles breadcrumbs.
- Mix in the 50 gm of sugar.
- Add the 'crumble mixture' to the top of the fruit, squeezing the crumble to compress it a little.
Cooking
- Bake in the oven for 40 minutes.
Serving
- Serve with cream, yogurt, evaporated milk or custard - whatever takes your fancy.

(1) I have also used nectarines, but any fruit can also be used.
