C46 Chicken Rogan Josh

This is an updated recipe but the original can still be located here. Chicken Rogan Josh can be found on all Indian Restaurant menus and is a Medium/Hot curry with a spicy tomato flavour.


For 1 Continued...
3 tbspn oil ½ tspn garam masala
50 gm onion (prepared weight) 300 ml c46 curry base sauce (see note 1)
1 tspn ginger (grated) 1 tbspn tomato purée
1 tspn garlic (crushed) 1 portion c41 pre-cooked chicken
½ tspn ground coriander ¼ tspn salt
½ tspn ground cumin 3 tbspn chopped tomato
½ tspn chilli powder 2 tbspn yogurt


Cooking - 7½ min

  1. Heat the oil in a suitable pan and cook the onion, stirring regularly, for 2 min.
  2. Add the ginger/garlic paste and cook, stirring, for 30 seconds.
  3. Stir in the ground coriander, ground cumin, chilli powder and garam masala and cook, stirring, for 1 min, adding a little c46 base sauce if needed to prevent drying and burning.
  4. Add the tomato purée and 80 ml of c46 base sauce and cook, stirring, for 1 min.
  5. Add the c41 pre-cooked chicken, salt, chopped tomato and 80 ml of c46 base sauce and cook, stirring regularly, for 3 min, adding c46 base sauce as required to maintain the desired sauce consistency.
  6. Reduce the heat and stir in the yogurt.


  1. Serve with rice and garnish with a little freshly chopped coriander and, optionally, a swirl of yogurt.


(1) Dilute the c46 base sauce with 100 - 200 ml of water and warm before use. Other base sauces can be used, diluted or not, as required by the specific base sauce.
