C41 Chicken Rogan Josh


For 1 Continued...
1 portion precooked chicken ½ tspn ground coriander
2 tbspn oil ½ tspn ground cumin
300 ml C41 curry base sauce ¼ tspn hot chilli powder
100 gm onion (prepared weight) ¼ tspn salt
8 cardamom pods 1 tbspn chopped tomatoes
4 black peppercorns 1 tbspn tomato purée
¼ tspn garam masala 2 tbspn yogurt



  1. Heat the oil in a pan over a low to medium heat and fry the cardamom, peppercorns and garam masala for a few seconds.
  2. Add the onions and fry until medium brown for about 5 min.
  3. Add the ground coriander, ground cumin, chilli powder and salt and stir for 30 seconds.
  4. Stir in the tomato purée and fry, stirring, for 1 min.
  5. Add the chopped tomatoes and 120 ml of C41 base sauce and stir for 1 min.
  6. Stir in the chicken and cook for 3 min, gradually adding the remaining C41 base sauce.
  7. Just before serving reduce the heat, stir in the yogurt and heat through.


  1. Serve with rice and optionally drizzle with a little yogurt and optionally garnish with freshly chopped coriander.
