C41 Chicken Dhansak

Preparation
- Cut the pineapple ring into 8 pieces.
- Finely chop the green chilli.

- Tip the lentils into a pan of boiling water and boil vigorously, uncovered, for 10 min, stirring occasionally.
- Drain the lentils and resewrve.
Cooking
- Heat the oil in a wok or heavy pan and cook the c41 dhansak spice mix and chilli powder for 1 min, stirring.
- Add the green chilli and cook, stirring regularly, for 1 min.
- Add the lentils and 80 ml of c41 base sauce and cook for 1 min.
- Add the chicken, salt and 80 ml of c41 base sauce and cook, stirring regularly, for 3 min, adding more c41 base sauce as needed to maintain a thick sauce consistency.
- Add the pinjeapple chunks, pineapple juice and lemon juice, stir well, and cook for 2 min.
Serving
- Serve with rice and garnish with a little freshly chopped coriander.
Notes
Only about 200 ml of c41 base sauce is likely to be needed.
