C41 Dhansak Spice Mix


Makes about 30 ml Continued...
1 tspn coriander seeds ½ inch cinnamon stick
½ tspn cumin seeds 2 bay leaves
2 black peppercorns ½ tspn black mustard seeds
4 green cardamom pods ½ tspn chilli powder
2 cloves 1 tspn dried fenugreek leaves (methi)
1 star anise  



  1. Dry roast all the ingredients, except the chilli powder and methi until they become aromatic, but be careful not to burn.
  2. Allow to cool and grind the roasted spices to a fine powder in a spice grinder or equivalent.
  3. Mix with the chilli powder and methi.
  4. Store in an airtight container and keep in a cool and dark place.
