Sweet Pepper Soup

Green peppers from a typical supermarket are usually in packs of 3 with red and yellow/orange ones. I use this recipe to make use of ony excess of peppers that I have. It makes a surprisingly tasty dish.


For 1 Continued...
oil or butter as required ½ green pepper
100 gm onion (prepared weight) 1 vegetable or chicken stock cube
½ red pepper 2 tspn cornflour (optional)
½ yellow pepper  



  1. Over a low/medium flame heat the butter/oil in a suitable pan, add the onion and peppers and fry, stirring regularly, for 5 min.
  2. Add the stock, bring to a boil, and simmer, stirring regularly, for 30 min.
  3. Blend the soup to a smooth consistency.
  4. If you want to thicken the soup, probably unlikely, return to the heat, add the cornflour mixture and stir until thickened to your taste.


  1. Serve with a bread roll, flavoured flatbread, or other bead of choice.
