Baked Potato with Cabbage and Bacon

Ingredients

For 1 Continued...
1 tbspn oil Salt & freshly ground black pepper
2 rashers of smoked bacon 2 button mushrooms
125 gm onion (prepared weight) 2 tbspn chopped tomatoes
150 gm red or green cabbage  

Preparation

Cooking

  1. Bake the potato in the oven for 1 - 1 ½ hours depending on size.
  2. Heat oil in a large saucepan and cook the onion and bacon for 8 min, stirring occasionally.
  3. Add the cabbage and mushrooms and season with salt & pepper.
  4. Stir for a few minutes, over a moderate heat, until the cabbage begins to lose volume.
  5. Add the chopped tomatoes, stir well, cover and continue to cook for 8 min.

Serving

  1. Serve with the baked potato with a generous amount of butter on the potato.
