Noodles with Tuna and Mushrooms

Up to 6 mushrooms of choice (depends on size) |
¼ tspn sugar |
1 block medium egg noodles |
2½ tspn nam pla (fish sauce) |
1 tbspn oil |
1 tspn dark soy sauce |
¼ onion (about 75 gm prepared weight) |
100 ml chicken stock |
1 clove garlic |
½ small tin tuna |
1 tspn green chilli |
Freshly ground black pepper |
¼ carrot (about 75 gm prepared weight) |

Preparation
- Cook the noodles as shown on the packet.
- Drain, rinse in cold water and toss with a little oil to prevent the noodles sticking together.
- Slice the mushrooms.
- Thinly slice the onion.
- Crush or finely chop the garlic.
- Slice the carrot into thin circles.
- De-seed the green chilli and chop finely.
Cooking
- Heat a wok and add some oil.
- Add the onions and cook for 3 min.
- Add the garlic and chilli and cook for a few seconds.
- Add the carrot and cook for 1 min.
- Add the mushrooms, sugar, soy and fish sauces, noodles and stock.
- Stir well to combine.
- Cover and cook for 5 min.
- Crumble in the tuna, season with pepper and heat through.
Serving
- Serve immediately.
