Noodles with Tuna and Tomato Sauce

1 block medium egg noodles |
12 pitted black olives |
2 tbspn oil |
2 tbspn chopped tomatoes |
1 clove garlic |
2 tbspn passata |
½ tspn red chilli |
1 tbspn dried parsley |
¼ onion (75 gm prepared weight) |
Salt & black pepper |
½ small tin tuna |

Preparation
- Cook the noodles as directed on the packet (when cooked toss with a little oil to prevent sticking).
- Finely chop the garlic.
- Deseed and finely chop the chilli.
- Thinly slice the onion.
- Cut each olive into four pieces.
Cooking
- Heat the oil in a wok.
- Add the garlic and chilli and stir fry for a few seconds.
- Add the onion and stir fry for about 3 min until softened.
- Add the olives, chopped tomato, parsley and passata.
- Add seasoning and simmer for 10 min (add a little water if the sauce dries out too much).
- Add the noodles and mix into the sauce.
- Break up the tuna and carefully add it to the wok, and heat through.
Serving
- Serve immediately.
