Noodles with Chorizo and Tomato Sauce

Ingredients

For 1 Continued...
1 block medium egg noodles 1 tspn fresh ginger
2 tbspn oil 1 clove garlic
50-60 gm chorizo (or other spicy sausage) 1 tspn horseradish sauce (Colmans)
100 gm onion (prepared weight) 1 tspn green chilli
2 tbspn chopped tomatoes 1 chicken stock cube
2 tbspn passata ½ large tin beans about 120 gm (borlotti, pinto etc)

Preparation

Cooking

  1. Heat the oil in a wok.
  2. Add the chorizo and stir fry for 2 minutes to flavour the oil.
  3. Add the onion, stir, and fry for 2 minutes.
  4. Add the ginger, chilli and garlic and stir fry for a few seconds.
  5. Add chopped tomatoes, passata, beans, horseradish, stock cube and a little water.
  6. Simmer for 10 minutes, adding water as necessary, until the sauce is quite thick.
  7. Add the noodles and heat through.

Serving

  1. Serve immediately.
