Noodles with Chorizo and Tomato Sauce

1 block medium egg noodles |
1 tspn fresh ginger |
2 tbspn oil |
1 clove garlic |
50-60 gm chorizo (or other spicy sausage) |
1 tspn horseradish sauce (Colmans) |
100 gm onion (prepared weight) |
1 tspn green chilli |
2 tbspn chopped tomatoes |
1 chicken stock cube |
2 tbspn passata |
½ large tin beans about 120 gm (borlotti, pinto etc) |
Preparation
- Cook the noodles as specified on the packet.
- Cut the chorizo into slices.
- Finely chop the ginger.
- Finely chop the garlic.
- Finely chop the onion.
- Finely chop the chilli.
Cooking
- Heat the oil in a wok.
- Add the chorizo and stir fry for 2 minutes to flavour the oil.
- Add the onion, stir, and fry for 2 minutes.
- Add the ginger, chilli and garlic and stir fry for a few seconds.
- Add chopped tomatoes, passata, beans, horseradish, stock cube and a little water.
- Simmer for 10 minutes, adding water as necessary, until the sauce is quite thick.
- Add the noodles and heat through.
Serving
- Serve immediately.
