Mushroom and Bean Chow Mein


For 1 Continued...
1 tbspn oil 1 garlic clove
½ green pepper 1 tspn ginger
30 gm onion (prepared weight) 1 chicken stock cube
30 gm carrot (prepared weight) 1 tspn horseradish sauce
30 gm green beans 2 tbspn soy sauce
100 gm button mushrooms 1 small tin pineapple pieces
100 gm beans (pinto, borlotti etc) 1 block egg noodles



  1. Heat the oil in a wok over a high heat.
  2. Stir fry the onion, carrot and green beans for 3 min.
  3. Add the ginger and garlic and stir fry for 1 min.
  4. Add the mushrooms, horseradish sauce, stock cube and some water and cook for 2 min.
  5. Add beans, soy sauce, 100 ml pineapple juice and several pineapple pieces and cook for 2 min.
  6. Add the cooked noodles, stir well and heat through.


Any combination of vegetables can be used such as sugar snap peas, mangetout, baby corn but try to get a variety of colours. A vegetarian meal can be made by using a vegetable instead of chicken stock cube. If the sauce needs thickening stir in 1 tspn of cornflour. Any beans of choice can be used.
