Mushroom and Bean Chow Mein

1 tbspn oil |
1 garlic clove |
½ green pepper |
1 tspn ginger |
30 gm onion (prepared weight) |
1 chicken stock cube |
30 gm carrot (prepared weight) |
1 tspn horseradish sauce |
30 gm green beans |
2 tbspn soy sauce |
100 gm button mushrooms |
1 small tin pineapple pieces |
100 gm beans (pinto, borlotti etc) |
1 block egg noodles |
Preparation
- Chop the onion, carrot and green pepper into small pieces.
- Slice the button mushrooms into 4 pieces.
- Finely chop the ginger.
- Finely chop the garlic.
- Cook the noodles as shown on packet.
Cooking
- Heat the oil in a wok over a high heat.
- Stir fry the onion, carrot and green beans for 3 min.
- Add the ginger and garlic and stir fry for 1 min.
- Add the mushrooms, horseradish sauce, stock cube and some water and cook for 2 min.
- Add beans, soy sauce, 100 ml pineapple juice and several pineapple pieces and cook for 2 min.
- Add the cooked noodles, stir well and heat through.
Notes
Any combination of vegetables can be used such as sugar snap peas, mangetout, baby corn but try to get a variety of colours.
A vegetarian meal can be made by using a vegetable instead of chicken stock cube.
If the sauce needs thickening stir in 1 tspn of cornflour.
Any beans of choice can be used.
