Chicken Chop Suey


For 1 Continued...
1 tbspn oil 100 ml pineapple juice
1 chicken breast Pineapple chunks to taste
75 gm celery 2 spring onions
½ green pepper 1 tbspn soy sauce
6 button mushrooms 50 gm sugar snap pea pods
1 vegetable stock cube ½ tspn ground ginger
1 tomato ½ tspn horseradish sauce
  Handful of bean sprouts and a few water chestnuts (optional)



  1. Heat the oil in a wok or a heavy pan.
  2. Add the chicken and fry for 2 min to seal.
  3. Add the crushed stock cube, pineapple juice, soy sauce, ginger, horseradish sauce, celery and green pepper.
  4. Fry for 2 min.
  5. Add the tomato, spring onions, mushrooms and sugar snap peas and fry for 2 min.
  6. Add the pineapple chunks and optionally the bean sprouts and chestnuts.
  7. Stir fry until the chicken is fully cooked.


  1. Serve with rice.


Add a little water at any time to prevent drying out.
