Chicken with Orange and Black Bean Sauce

The flavours combine well to produce an excellent dish typical of a Chinese restaurant.


For 1 Continued...
1 chicken breast 4 tbspn orange juice
1 tspn cornflour (1) 1 tbspn light soy sauce
1 tbspn oil 3 tbspn rice wine or dry sherry
1 tspn ginger (finely chopped) 2½ tbspn black bean sauce
1 tspn garlic (finely chopped) 2 tbspn soft brown sugar
2 spring onions 30 gm bean sprouts (optional)
50 gm green pepper 1 tspn cornflour (2)


Cooking - about 4 min

  1. Heat the oil in a wok to a high heat and add the ginger, garlic, spring onions and green pepper and stir fry for 2 min.
  2. Add the sauce and cook, stirring regularly, for about 1 min.
  3. Add the cooked chicken and, optionally, the bean sprouts and cook, stirring regularly, for 1 min.
  4. Add the cornflour/water mixture and stir fry until the sauce suitably thickens.


  1. Serve with rice.
