Kitchen King Spice Mix
This is a popular spice mix that can be used in cooking Indian curries although mainly in
vegetarian recipes but not exclusively.
There are many recipes on-line and this was adapted from one such but changed to make a simpler
and smaller quantity.
This contains all of the spices found in the more sophisticated versions of
Punjabi Garam Masala.
This can be purchased at some outlets (eg from MDH).
Ingredients

1 tspn coriander seeds |
½ star anise |
1 tspn cumin seeds |
1 black cardamom (seeds only) |
1 tspn poppy seeds |
3 cloves |
1 tspn fenugreek seeds |
3 dried birds eye chillies |
1 tspn fennel seeds |
1 in stick cinnamon |
½ tspn black cumin seeds |
¼ heaped tspn turmeric |
½ tspn black pepper |
1/8 tspn heaped ground nutmeg |
½ tspn yellow mustard seeds |
½ tspn ground ginger |
¼ tspn cardamom seeds |
½ tspn salt |
Preparation
- De-seed the black cardamom.
- Break the cinnamon stick and star anise into small pieces.
- Dry roast the whole spices (ie not the turmeric, ground nutmeg, ground ginger or salt) and when cool, grind to a fine powder in a spice grinder.
- Thoroughly mix in the turmeric, ground nutmeg, ground ginger and salt.
- Store in a cool and dark place.
