C46 Balti Paste

This is a homemade version of a Balti Paste similar in nature to Patak's and can be used in a similar manner. A recipe that uses this paste can be located here. This is not an attempt to exactly replicate Patak's paste but it does use the same ingredients which can be located on their website or on the individual jars.

Ingredients

Makes 2 - 3 tbspn Continued...
2 tbspn oil 2 tspn cider vinegar or white wine vinegar
1 tspn ground cumin ¼ heaped tspn freshly ground black pepper
1 tspn paprika 1/8 heaped tspn garlic powder
1 tspn turmeric 1/8 heaped tspn coriander seed
¾ tspn ground coriander 1/8 heaped tspn dried red chilli flakes
¾ tspn c41 spice mix 1/8 heaped tspn black onion seeds
¾ tspn fennel seeds 1/8 heaped tspn dry coriander
1½ tspn salt  

Preparation

Cooking

  1. Heat the oil in a pan over a medium heat and cook the dry spices and coriander, stirring, for 1 min.
  2. Stir in the salt and vinegar and continue to cook, stirring for 1 min.
  3. Allow to cool and add a little water to achieve the desired consistency and spoon into a suitable jar and keep refrigerated.

Notes

(1) This can be used as an ingredient in cooking a curry much as one would use a curry paste such as Patak's.
