C41 Chicken Xacuti

Chicken Xacuti is a dish from Goa, West india, and is typically a dry dish with shredded coconut. This offering has been adapted to BIR style and is quick and tasty. An updated version of this recipe can be located here.

Ingredients

For 1 Continued...
2 tbspn oil 1 portion precooked chicken
50 gm onion (prepared weight) 2 tspn red chilli
300 ml c41 curry base sauce ¼ tspn salt
1 portion c41 xacuti spice mix 1 tbspn lemon juice
½ tspn hot chilli powder 40 gm creamed coconut block

Preparation

Cooking

  1. Heat the oil in a wok or heavy pan and cook the onion for 2 min.
  2. Add 80 ml of c41 base sauce and cook, stirring regularly, for 2 min, adding c41 base sauce as needed to prevent drying.
  3. Stir in the c41 xacuti spice mix and chilli powder and cook, stirring, for 1 min, adding c41 base sauce as needed to prevent drying and burning.
  4. Add the chicken, red chilli, salt and 80 ml of c41 base sauce and cook, stirring regularly, for 3 to 4 min, gradually adding the remaining c41 base sauce and cooking until the desired sauce consistency is reached.
  5. Reduce the heat and stir in the lemon juice and creamed coconut and cook for 1 min.

Serving

  1. Serve with rice and opitonally garnish with freshly chopped coriander.

Notes

Xacuti is pronounced SHA-KOO-TEE.
