C41 Vindaloo Spice Mix

4 parts coriander seeds |
1 part ground cinnamon |
2 parts cumin seeds |
1 part fenugreek powder |
2 parts black mustard seeds |
1 part cayenne pepper or hot chilli powder |
1 part black peppercorns |
1 part turmeric |
1 part cardamom seeds |

Preparation
- Deseed enough green cardamom pods to produce the required quantity of seeds.
- In a pestle and mortar or a spice grinder, grind the peppercorns, coriander, cumin, mustard and cardamom seeds to a smooth powder.
- Thoroughly mix in the four remaining powdered spices.
- Store in an airtight container away from the light and heat.
Notes
Choose a measuring spoon that will be equal to 1 part such as 1 tspn, ½ or ¼ tspn.
Then combine the ingredients using this basic measurement.
Ground coriander and ground cumin can be used but using seeds is better.
This spice mix owes a lot to the more traditional style, but helps to differentiate the vindaloo from a 'hotted up' Madras.
