C41 Multani Spice Mix
Ingredients

1 tspn anardana powder (see note 1) |
¼ tspn ground ginger |
1 tspn amchoor powder (see note 2) |
¼ tspn crushed black pepper |
½ tspn chilli powder (see note 3) |
¼ rounded tspn cumin seeds |
¼ tspn salt |
¼ tspn ajwain seeds (see note 4) |
Preparation
- Dry roast the cumin seeds until fragrant and grind to a powder in a pestle and mortar.
- Grind the ajwain seeds to a powder in a pestle and mortar.
- Mix all of the spices together and store in an airtight container in a cool and dark space.
Notes
(1) Anardana is powdered pomegranate seeds and can be purchased at any Asian outlet.
(2) Amchoor is powdered green mango and can be purchased at any Asian outlet.
(3) Preferably use a Kashmiri chilli powder or Deggi Mirch which is a blend of colourful red Indian chillies including Kashmiri.
(4) Ajwain seeds can be purchased at any Asian outlet.
