C41 Malvani Spice Mix
This is a typical spice mix used in Koncan cuisine from Malvani in Maharashtra but converted to
 more of a BIR (British Indian Restaurant) style.
Ingredients
| Makes approx 6 tspn - 30 ml |

| 1 tbspn ground coriander | 
¼ tspn white mustard seeds | 
| 1 tspn garam masala | 
¼ tspn black cumin seeds | 
| ½ tspn ground cumin | 
¼ tspn turmeric | 
| ½ tspn fennel seeds | 
1/8 tspn asafoetida | 
 
Preparation
- Grind the fennel seeds, mustard seeds and black cumin seeds to a powder in a pestle and mortar.
 
- Thoroughly mix all the spices, transfer to a small jar and store in a cool and dark place.
