C41 Precooked Chicken Karahi
Ingredients

| 1 chicken breast | 
1 tspn green chilli | 
| 1 tbspn oil | 
 ¼  tspn salt | 
| 75 gm onion (prepared weight) | 
1 tomato (see notes) | 
|  ½  tspn garlic |

|  ½  tspn ginger | 
  | 
 
Preparation
- Cube the chicken.
 
- Finely slice the onion.
 
- Crush the garlic.
 
- Grate the ginger.
 
- Make a paste by mixing the garlic and ginger with a little water.
 
- Finely chop the chilli.
 
- Chop the tomato into small pieces (see notes).
 
Cooking
- Heat a wok or heavy pan, add the oil and fry the onion for 2 min.
 
- Stir in the ginger and garlic paste and the chilli and fry, stirring regularly, for 2 min.
 
- Stir in the chicken, add the salt and tomato and fry for 1 min to seal.
 
- Stir in 2 tbspn of water and simmer for 10 min, stirring occasionally,
 
- Ensure that the chicken is properly cooked by chopping a chicken cube in half. It is cooked when it is white throughout.
 
- Transfer the chicken and its sauce to a small bowl to cool.
 
- The chiken and sauce can be used immediately, refrigerated for use in a few days or frozen.
 
Notes
3 tbspn of chopped canned tomatoes can be used but using fresh tomato will produce a better flavour.
