C41 Chicken Jalfrezi

Ingredients

For 1 Continued...
1 portion precooked chicken ¼ tspn cumin seeds
1 tbspn oil ½ tspn ground coriander
300 ml c41 curry base sauce ½ tspn ground cumin
100 gm onion (prepared weight) ½ tspn hot chilli powder
1 tspn tomato purée ¼ tspn salt
½ green pepper 2 tspn red or green chilli
½ tspn c41 spice mix 2 tspn ginger
  1 tbspn fresh coriander

Preparation

Cooking

  1. Heat the oil in a pan and fry the cumin seeds for 30 seconds.
  2. Add the onion and fry for 3 min.
  3. Add the red or green pepper, c41 spice mix, chilli powder, ground coriander, ground cumin, salt and tomato purée and cook, stirring, for 30 seconds.
  4. Add 160 ml of c41 base sauce, red or green chilli and chicken and cook for 3 min, gradually adding the rest of the c41 base sauce.
  5. Add the ginger and fresh coriander and cook for 2 min or until the sauce has reduced to the desired consistency.

Serving

  1. Serve with rice and optionally garnish with freshly chopped coriander.
