C41 Chicken Tikka Masala

This uses c41 precooked chicken tikka. It is dispenses with the lengthy marinating process but is just as tasty and much less 'hassle' to prepare.

Ingredients

For 1 Continued...
1 tbspn oil 1 portion c41 chicken tikka
2 tspn c41 tikka spice mix ¼ tspn salt
½ tspn tandoori masala (see note (1) 20 - 25 gm creamed coconut block (to taste)
¼ tspn chilli powder 3 tbspn evaporated milk
1 tbspn tomato purée 1 tbspn ground almonds
300 ml c44 or c41 curry base sauce  

Preparation

Cooking

  1. Heat the oil in a wok or high sided frying pan, stir in the c41 tikka spice mix, tandoori masala and chilli powder and cook, stirring regularly, for ½ min, adding a little curry base sauce if necessary to prevent drying and burning.
  2. Stir in the tomato purée and 80 ml of curry base sauce and cook, stirring regularly, for 1 min, adding a little curry base sauce if necessary to prevent drying.
  3. Add the precooked chicken tikka, salt and 80 ml of curry base sauce and cook, stirring regularly, for 3 min, adding curry base sauce as needed to maintain a thick sauce.
  4. Reduce the heat, add the coconut, evaporated milk and ground almonds, mix well, and cook for about 1 min.

Serving

  1. Serve with rice and optionally garnish with a little freshly chopped coriander.

Notes

(1) The Tandoori Masala Spice Mix can be purchased at many supermarkets or from any Asian outlet and does contain some food colouring.
