C41 Balti Tamatar Chicken

This is cooked using pre-made base sauce and pre-cooked chicken. It was actually inspired by a recipe from Shehzad Husain but converted for a single portion with ingredient changes and adjusted cooking style. It is a very nice MEDIUM dish that is unusual in that it uses tomatoes instead of onions as a 'base'.

Ingredients

For 1 Continued...
2 tbspn oil ½ tspn ground coriander
¼ tspn onion seeds ½ tspn ground cumin
¼ tspn black mustard seeds 1 portion c41 balti precooked chicken
2 medium tomatoes (about 150 gm prepared weight) 200 ml c41 balti base sauce (see note 1)
¼ tspn garlic (crushed) ¼ tspn salt
½ tspn chilli powder 2 tspn sesame seeds
½ tspn paprika  

Preparation

Cooking - 7 min

  1. Heat the oil over a HIGH heat in a wok (or similar pan) and fry the onion and mustard seeds for 30 seconds.
  2. Add the tomatoes and fry for 2 min, breaking them up as they soften.
  3. Add the garlic and cook, stirring, for 30 seconds.
  4. Remove the pan from the heat and stir in the chilli powder, paprika, ground coriander and ground cumin.
  5. Stir in the precooked chicken and return to a LOW heat and cook, stirring regularly, for 2 min.
  6. Increase the heat, stir in 150 ml of c41 balti sauce and salt and cook, stirring regularly, for 2 min, adding a little c41 balti sauce if needed to prevent drying (unlikely) or to produce the desired sauce consistency.

Serving

  1. Serve with naan (rice if you prefer) and garnish (to taste) with the roasted sesame seeds and freshly chopped coriander.

Notes

(1) Dilute the c41 balti base sauce with 100 ml of water and heat before use.
